Sailing camps are shaped by their water more than their curriculum. A sheltered lake is where almost every good sailor started, and it is the right place for a first week. Open coast is more exciting and much more weather dependent, which in practice means more time ashore than the brochure photographs suggest.
Most European sailing camps teach to a recognised scheme, which is genuinely useful: the levels transfer between countries and clubs, so a week here counts towards the next one somewhere else. Check which scheme, and which stage your child would reach.
Look for the ratio of boats to students. Sailing is learned by sailing, and a camp where four children share a dinghy is a camp where each of them sails for a quarter of the time.

Every reputable sailing camp sets a swimming requirement, usually around fifty metres in clothing, and buoyancy aids are worn at all times regardless. If your child is a weak swimmer, say so before booking rather than on the first morning, when the honest answer may be that they cannot go afloat.
Good camps have a plan and it is usually a good one: kayaking, paddleboarding, knots, capsize drill, or racing rules ashore. Ask what the last week of light wind looked like. The answer tells you a great deal about how well the camp is run.
It depends on the country and the scheme. Most camps in the UK teach to the RYA syllabus and most European ones to their national equivalent, both of which are recognised widely. A one week course typically covers one stage, sometimes two for an experienced sailor.
